Soto Medan, Indonesia
One of my favorite dishes is soto. I never try to make it, but someday I will make it with my own taste haha.
Recipe Soto Medan
Ingredient:
a chicken, cut into half2 lemon grass,take white part then mashed it
4 Indonesian lime leaves (wild lime), throw away the bone leaves
2 bay leaves
2 cm galangal, mashed
1 1/2 tablespoon salt
1/2 teaspoon sugar
500 ml thick coconut milk from a coconut
1500 ml thin coconut milk (from thick coconut milk + water)
2 tablespoon oil for stir-fry
Spices:
12 spring onion, mashed6 cloves of garlic, mashed
1 tablespoon coriander, mashed
1/2 teaspoon caraway/cumin, mashed
1 teaspoon pepper
2 cm ginger, mashed
2 cm tumeric, grilled, mashed
Complement:
4 boiled eggs2 tomato
150 boiled potatoes, cut into pieces
2 tablespoon fried onion
fried emping/chips
How to make:
1. Heat the oil. stir-fry spices, bay leaves, galangal, and lemongrass until fragrant. Lay the chicken and stir until the color change.2. Pour slowly thin coconut milk and boiled. Add salt. Boiled until the chicken done.
3. Pour Soto Medan to 4 bowls and put each boiled egg, tomato, boiled potatoes, fried onion, and fried chip.
4. Soto Medan is ready to eat, and more delicious if you eat it with rice.
